Spring is in the air and the wedding season is about to kick off! In honor, tomorrow’s soup is a delicious Italian Wedding Soup with Turkey Meatballs. I took my grandma’s recipe for her Italian Wedding Soup and throw in a little twist exchanging the meatballs for turkey meatballs. Not only is it a little healthier, but it tastes delish. Here’s the list of ingredients:
Italian Wedding Soup with Turkey Meatballs:
1 large (48 oz) container of chicken broth
6 eggs (hardboiled)
1 (15 oz) bag of fresh spinach
3 cups of cooked pastina
4 carrots or 1/2 a bag of the small baby carrots
1 yellow onion (1/2 for soup and 1/2 for meatballs)
1 package of ground lean turkey breast
1 cup pecorino romano cheese
1 cup bread crumbs
3-4 cloves of fresh garlic
1 handful of chopped parsley
2-3 eggs
